The Cool Cook
If you can't stand the heat get out of the kitchen? Not in my view you don't. If you can't stand the heat, take IT out of the kitchen! Take control. Whether the kitchen is heaven or hell is entirely up to you and I want to help you achieve the former. Hence this ever-growing series of articles. Now bear in mind that some cooks will disagree with much of what I have to say. As a matter of fact no cook will agree with everything I have to say. If you want to be entertained (or bored stiff) for an evening mix with off-duty chefs at the end of a working day. About the only thing they are likely to agree about is how to prepare a Victoria Sponge - or at least we did until I mentioned that I cooked mine in a frying pan! Fortunately that doesn't mean that anyone is wrong or misguided. It simply means that there are many different ways of preparing and cooking food, all of which are valid if you like the result. All I have tried to do with the articles listed below is pass on the experiences of more than thirty years of cooking, kitchens, chefs, tips, tricks, tantrums and shortcuts garnered from all parts of the world. So please keep an open mind. We can all learn. The truth is I have yet to meet a chef, however bad, who did not teach me something.
