Kitchen Tips: Washing Rice

Washing rice to get rid of excess starch is one of those things you keep coming across in cookbooks that should know better. Frequently you are urged to rinse the rice grains until the water runs clear.

Have the writers of that nonsense even considered how much drinking water that wastes?

Hey. Newsflash. Australia is not the only country suffering drought right now. Don't even think about it!

Cook your rice using my basic method, which you will find at the address below, and then rinse the cooked grains in cold water to get rid of the excess starch. Drain and, when you need to reheat, place the colander of rice over an inch or so of boiling water for a few minutes.

Incidentally, there will be less starch hanging around after cooking if you add two tablespoons of vinegar to the cooking water in the first place.
