Kitchen Tips: Substitute For Eggs This is an interesting little trick that can be used in baking. If your cake recipe calls for three eggs and you only have two, use a tablespoon of vinegar in place of the third egg. Just why this works is a bit of a mystery, but as a cooking tip it dates back to the Second World War, when fresh eggs were in short supply. One egg can be replaced by the vinegar in any cake recipe calling for three or more eggs. However it will not work in a two egg recipe - you need both eggs for that.
