Kitchen Tips: Smoke From Broiling Broiling (grilling) meat at high temperature in the kitchen can lead to a fair bit of smoke getting into the air, because leached fat starts to burn in the bottom of the tray. You can prevent this by partially filling the broiler tray with cold water prior to cooking. This has the added advantage of making it much easier to clean afterwards. If your tray is too shallow to hold water, putting a small container of water under it will still help to reduce the amount of smoke given off by increasing the humidity in the broiler compartment.
