Kitchen Tips: Separating Eggs
The easiest way to separate eggs, and one that many chefs use, is to crack the eggs into a bowl and lift out the yolks using your fingers. An alternative is to break the egg into your hand and allow the white to run through your fingers into a waiting receptacle. The skin of the yolk is much tougher than you think. If you really, really hate the idea of handling raw egg, crack the egg into a kitchen funnel. The white will run through, leaving the yolk in the bowl. Of course, if you really like tipping the thing backwards and forwards in two halves of a broken shell, that's okay too, but very time consuming and a little risky. Shells cut yolks very easily. |
