Kitchen Tips: Salad Dressings
The best 'tool' I have ever used for making salad dressings is a baby's feeding bottle. What makes the feeder so effective is that it has measurements graded on its side. You just can't get the mix wrong. If it has a stopper - and some do - so much the better. If not use your thumb. For a simple dressing, start by adding a teaspoon of salt, pour in your vinegar of choice up to the first marker and shake to dissolve the salt. Now pour in oil up to the fifth marker and shake to form your dressing. You now have a perfect 4 to 1 balance. If you like your dressing to have more of a bite, add oil to the fourth marker instead. Finally, whatever dry ingredients you intend to add, such as mustard powder perhaps, or black pepper, always put those in the bottle first and leave the oil till last. |
