Kitchen Tips: Raw Garlic in Salads
Generally speaking, most people find garlic too pungent to be used raw in a salad, but just a hint of it can really lift lettuce leaves into something out of the ordinary. Salad dressings and mayos are all very well, but the garlic used in them has usually been blanched and will certainly have a different flavor to a freshly cut clove. The cool cook's trick is to dip the cut side of a clove in salt and rub it round the inside of the salad bowl, then toss the leaves in that before adding any dressing. It works wonders and will not be overpowering. |
