Kitchen Tips: Peeling Hard Boiled Eggs

Hard boiled eggs can be tricky to peel in such a way that they remain whole and perfect. There are several reasons for this, all of which can be easily overcome. So here's a foolproof method for peeling them.

First you have to cook them properly. Do this by bringing them to a boil in just enough salted water to cover them, let them cook for a minute and then remove from the heat. Cover the pan and let it stand for 20 minutes.

Now plunge the eggs into ice-cold water, tap the shells all over and roll the eggs backwards and forwards under the palm of your hand a few times. Peel them from the blunt end.

Rinse off any little pieces of shell under running water.

Now here is a major tip; the main reason people have trouble peeling eggs is because they store them in the refrigerator with the shells still on. Don't do this (or pay the penalty if you do). Store your eggs peeled and in a covered container. They will keep for 3-4 days without coming to any harm.
