Kitchen Tips: Mixing Small Items
This tip is so 'obvious' that I almost didn't include it. But then I remembered the number of times I have pointed it out to young professional chefs in the past who didn't find it so obvious at all. If you want to whisk one egg, or a small quantity of liquid, with an electric whisk, use a small container to hold it and remove one of the beaters from the whisk. Now be honest, had you really thought of doing that before you read this? |
