Kitchen Tips: Microwave Containers

The best cooking container to use in a microwave oven is a circular glass ring mold. Not only does the food cook evenly in one, you don't need to keep stirring it either.

Unfortunately, for whatever reason, they are almost impossible to come by, so you'll just have to make your own. Which is very easy to do. Take any round glass dish that will fit inside your microwave and simply invert a glass tumbler in the centre of it. You will find it the best cooking implement you have ever used as far as microwaves are concerned.

Now whenever I mention this, I get emails telling me this is inefficient because microwaves cook from the centre out and that's the bit where the tumbler is. If you are thinking that right now, please forget it. It's a myth.

Microwaves cook food from the outside in, penetrating to a depth of no more than about 6cms (say 2.5 inches) depending on the consistency of the food. Which is why food cooked in a conventional container needs to be stirred during the process, or else left to stand in the oven after the cooking time so that the heat can be spread by convection.
