Kitchen Tips: Keeping Meat Fresh
Hot weather and meat don't mix too well and not everyone has a fridge in the car. So what's the best way to transport fresh meat to your favorite barbecue spot without encouraging spoilage? First wash the meat in a weak solution of vinegar and water. The vinegar is a mild antiseptic and will kill any bacteria on the surface of the meat. Next cover each piece of meat with sliced raw onion and store in layers in a suitable container with a lid that forms a good seal. Meat treated in this way will keep fresh for many hours in the hottest of weather. As an added bonus, the onion can be cooked and caramelized as an accompaniment for the meat. |
