Kitchen Tips: Keeping Cut Avocado Fresh

Many cookbooks suggest painting a cut avocado (alligator pear) with lemon juice or olive oil to prevent it from going brown. This does work for a short time, but what if you want to keep an unused half in the fridge overnight?

It will stay fresh for longer if you leave the stone in it and cover it in plastic wrap. Don't ask me why this works but it does and will often 'keep' for three days or more. You can also keep guacamole fresh in this way. Put the avocado stone in the middle of the mix and leave it there until you are ready to serve it. It will not discolor for quite some time.
