Kitchen Tips: Juicing a Lemon

Before juicing a lemon, roll it backwards and forwards under the flat of your hand a couple of times with slight downward pressure.

This will release more of the juice and works especially well when you are intending to prepare lemon wedges.

If your lemons are under ripe, or a little on the dry side, you can also persuade them to provide more juice by soaking them in hot water for a few minutes.
