Kitchen Tips: How to De-seed Chilies The 'heat' from chilies is mainly in the seeds, while the flavor is concentrated in the flesh. If you want the flavor without too much heat then you need to remove the seeds and there is a simple way to do that. Simply split the chili lengthwise and then use a melon baller (best) or teaspoon to scrape the seeds from the pointed end towards the stalk in one movement. The stalk will come away as well, leaving you with a shell which you can slice or chop as you wish.
