Kitchen Tips: Cooking Pasta
There is no time in a busy professional kitchen for messing about with basics like pasta. They have to look after themselves while the important things like sauces and accompaniments are prepared. My method for achieving this I learned many years ago working as a kitchen hand in a restaurant in Milan while touring Europe on a budget. Did I say budget? Like, nothing is a budget? Okay, here's what to do. Bring plenty of salted water to the boil, add about half a cup of olive oil and then throw in the pasta. Bring everything back to the boil, turn off the heat, cover with a tea towel and then the lid. Leave for exactly 15 minutes. Your pasta will be perfectly cooked, it will not stick together and it will still be 'al dente' - which is just what a good little pasta should be. |
