Kitchen Tips: An Alternative to Breadcrumbs If you like the schnitzel style of cooking, but find a breadcrumb coating too bland, try using a mix of almond meal and grated Parmesan or Pecorino cheese instead. You can further season this mix using chopped herbs and/or black pepper, or any other spice that comes to mind.
